He starts in the youth clubs of the Standard Liege, also being called up to the first team. In 1999, at the age of twenty, he moved to Monza, where he played a season of good level. In the next ten years he wore the Bari shirt between Serie A and Serie B, with the exception of a small parenthesis of 44 games in the 2003-2004 season with the Treviso shirt, due to some disagreements with the then coach of the red and white formation Marco Tardelli. Despite the approach from more famous clubs, especially from Lazio, Gillet prefers to stay with the Apulian team, of which he is also the captain and idol of the fans. In the 2009-2010 season he confirmed himself as a high-level goalkeeper, conceding in the first 12 days fewer goals than all his Serie A colleagues and other European clubs.
In August 2009, at the age of thirty, after an excellent performance against Inter at the debut in the new season of Bari in Serie A, he also won the call-up to the Belgian national team in view of the double World Cup qualifying effort 2010 against Spain and Armenia. He made his debut on September 5, 2009 in the home of the reigning European champions of Spain, saving David Villa a penalty but subsequently suffering 5 goals . In the next game he suffered two goals, which sanctioned the defeat of the Belgian team in Armenia by 2 to 1.
